  1. Hi Jenn:) Here is the recipe for the Sweet Potato Mini Muffins I made last weekend. They are GF & Vegan.

    1 1/4 Cup Brown Rice Flour
    3/4 Cup Buckwheat Flour
    2 tbsp Arrowroot powder
    2 tsp Baking Powder
    1 Cup Mashed Sweet Potato
    1 cup Rice Milk
    2 tbsp Canola Oil
    1/8 cup Maple Syrup

    Preheat oven to 350. Mix dry ingredients separately from wet. combine slowly. Mix by hand just enough to combine ingredients, if mixture is too dry you can add a little more rice milk. Divide into mini muffin tins. Bake about 15 minutes. Makes 24 mini muffins.
